i'm not sure. but either way, i need to give credit when its due (because thats what friends do). my bestie, jocelyn, introduced me to specialty's bakery & their dangerously tasty c.c. cookies. i have been dying to re-create the specialty's cookie for a while.... and now, thanks to mom (winda), i have a recipe that can do that. they are crispy, chewy and mighty huge. get ready for the best. cookie. ever.

special chocolate chip cookies
2 cups minus 2 tablespoons cake flour
1 2/3 cups bread flour
1 ¼ teaspoons baking soda
1 ½ teaspoons baking powder
1 ½ teaspoons coarse salt (kosher)
2 ½ sticks (1 ¼ cups) unsalted butter, softened
1 ¼ cups light brown sugar
1 cup plus 2 tablespoons granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 ¼ pounds bittersweet chocolate chips or chunks
Sea salt

Combine flours, baking soda, baking powder, and salt in a bowl. Whisk well; then set aside.

Cream butter and sugars until very light and fluffy, about 3 to 5 minutes. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla. Reduce the mixer speed to low; then add dry ingredients, and mix until just combined. Add the chocolate chips, and mix briefly to incorporate. Press plastic wrap against the dough, and refrigerate for 24 to 36 hours. (THE HARDEST PART)

When you’re ready to bake, preheat oven to 350°F. Remove the bowl of dough from the refrigerator, and allow it to soften slightly. Line a baking sheet with parchment paper or a silpat.

Using a standard-size ice cream scoop (about 1/3 cup) scoop six mounds of dough onto the baking sheet, making sure to space them evenly. Sprinkle lightly with sea salt, and bake until golden brown but still soft, 15 to 20 minutes.

try them out. they wont disappoint.

sky ranch
we just got back from a weekend at the cle elum cabin, or as the sign read (and so i have now christened it): SKY RANCH.

two peas in a pod, andrew & emily. i love watching these two interact with each other. they still have the newly-wed spark.

we loved how cliche the entire place was. we agreed it felt like bear country at disneyland. but a posh bear country.

mormon women and their treats. we were all on sugar-overload by friday nite.

so it was a good thing andrew & emily offered to make one of the yummiest breakfasts i have ever snarfed. seriously, the greasy, crisp pancakes were deeewicious.

while emily slaved over the stove, we ran outside to ride the four-wheelers for a bit.

alex was a natural. he and craig had a great time racing each other around the property. talk about two peas in a pod.

breakfast time.

tagg's favorite part of the cabin was the tower between the top bunk-beds. he was loving life.

some of us didnt make it thru the movie on friday nite, so there was a re-run matinee on saturday morning. dumb & dumber never gets old.

unless there is a one & a half year old playing pin ball in the background. THAT gets kinda old kinda fast.

the rest of saturday was spent riding around on the four wheelers for the men........

and laying out in the sun for the girls. but not just plain old laying out.......

laying out while watching andrew ride the zip line down the mountain and drop into the pond. priceless.

happy birthday, hanna! honestly, matt & hanna are two of the sweetest people i have ever met. i am incredibly happy we are friends.

the beans. gotta love em.

hahaha. this pictures gets me every time. i think because the glasses look funny under the hardcore speed-racer helmet. craig sure does love speed though. i couldnt watch some of the crap he was doing on those four wheelers.

i knew andrew would be obsessed with the cabin. its right up his alley. the only thing he would have loved more was if he could have slept in the teepee outside.

the entire time we were there i was smiling from ear to ear. i couldnt believe we were so lucky to have great friends to share such an awesome place with.

and his first day of nursery. look at my toddler! i can hardly believe it, but tagg is eighteen months now and therefore is able to join the tough crowd at church. i bought him a new outfit to wear for his premier sunday.

yeah, it didnt go so well. he never had a problem with separation anxiety before, but decided last sunday was the right time to start. lets just put it this way, this was his attitude for the entire TWO hours. ew.

we all needed a nap afterwards. but even though he kinda bugs sometimes, i cant stay mad at my gerber baby for too long. here's to next week.
